When I was first dating my husband, one of the things that won his heart was my fruit pizza recipe. He has a bit of a sweet tooth and he couldn’t get enough of the sugar cookie-based pizza crust with tangy cream cheese “sauce” and tons of fruit toppings. I still make it for him…sometimes even as a birthday cake substitute…and my kids are now big fans too. There are also regular requests from friends to bring it to potluck gatherings. It seems to be one of those things that everyone loves.

Imagine my delight when I saw this recipe for a similar pizza, made in the shape of an Easter egg! What a great idea! Sugar Hero gives you a very detailed step by step tutorial, and she even throws in a few variations on the recipe. She adds lemon zest to the cookie dough and strawberry jam to the cream cheese mixture. I make my cream cheese sauce with pineapple juice and leave out the powdered sugar, so there are many ways to customize this recipe to your taste! You can also use whatever fruits happen to be in season or that you prefer. I love the stripes that she has made, emulating the design of a decorated Easter egg. INGREDIENTS for Easter Egg Fruit Pizza:
For the Sugar Cookie:
- 14.6 oz all-purpose flour (3 1/4 cups)
- 1/2 tsp salt
- 1/2 tsp baking soda
- 6 oz butter at room temperature
- 10.5 oz granulated sugar (1 1/2 cups)
- 2 tbsp lemon zest packed
- 2 eggs at room temperature
- 2 tbsp cream
- 2 tsp lemon extract
For the Strawberry Cream Cheese Frosting:
- 8 ounces cream cheese at room temperature
- 1/3 cup strawberry jam at room temperature
- 6 oz powdered sugar (1 1/2 cups)
To Assemble:
- 8 cups assorted fresh fruit washed and sliced
- 1/4 cup apple jelly or other light-colored jelly
- 1 tbsp water
