In cowboy circles, hominy is as common a side dish as mashed potatoes. But not everyone really knows how to cook it to maximize all that it has to offer. This casserole dish, as prepared by Kent Rollins and his wife, is what they describe as “Mexican mac n’ cheese”. They cook it outside, in cast iron dutch oven, and are quite a hoot with their back and forth banter. But you can make this amazing dish just as easily inside.
The ingredient list is budget friendly and this dish comes together beautifully in under an hour. Kent seems to think this is so delicious that making it might bring some love into your life. It seemed to work for him!
Here’s your ingredient list:
- 2 (15.5-ounce) cans yellow hominy, drained
- 1 (4-ounce) can green chilies
- 4 – 6 slices thick-cut bacon, cut into 1-inch pieces
- 1 medium yellow onion, chopped
- 1 1⁄2 cups sour cream
- Salt and black pepper or Red River Ranch Seasoning, to taste
- 1 cup shredded cheddar cheese
