Berry Angel Food Cake with Coconut Whipped Cream! So Light and Fluffy!
When I’m asked have a saved room for dessert, I almost want to give a major side eye. I stuffed my face too much and there’s only a pocket of air left as “dessert room”. Ingredients
- 1½ cups sifted powdered sugar
- 1 cup sifted cake flour or sifted all-purpose flour
- 1½ cups egg whites (10 to 12 large), at room temperature
- 1½ teaspoons cream of tartar
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
- 1 cup granulated sugar
Toppings:
- 2-3 cups mixed berries (strawberries, blueberries, raspberries)
- ¼ cup granulated sugar
- 1 can coconut cream (13.5 oz), chilled in refrigerator overnight
- 1 teaspoon vanilla extract
