I know some people who are absolutely addicted to Chipotle. (Husband, if you are reading this, I may or may not be talking about you.) I have to admit, the chicken really is some of the most flavorful I have ever had at a fast-food joint and I rarely say no when offered one of their salads with a side of guac. With a spouse who may (or may not;) be one of Chipotle’s biggest fans, can you imagine the points I would score if I were able to recreate those flavors at home?
Thank you to All Recipes, for bringing a copycat recipe that looks sure to please! Theirs calls for dried chiles, which do have to be re-hydrated, but that is a small price to pay for making my man so very happy. Sometimes, it’s the little things.

Here’s your ingredient list:
- 1 ounce dried chipotle chile pepper
- 1 ounce dried ancho chile pepper
- 1/2 cup water
- 1/2 red onion, cut into small chunks
- 4 cloves garlic
- 2 t. sea salt
- 1 t. ground cumin
- 1 t. dried oregano
- 1t. freshly ground black pepper
- 2 T. olive oil
- 2 1/2 lbs. skinless, boneless chicken thighs
