For the Pimento Cheese
- 1 cup white cheddar, grated
- 1 cup yellow cheddar, grated
- 1 oz pimentos
- 2 oz cream cheese
- 1/3 cup mayonnaise
- 1/8 tsp salt
- 1/8 tsp pepper
For the sandwiches:
- 1 large green tomato or 2 small ones, sliced
- ¼ tsp salt (for the tomatoes)
- ¼ cup cornmeal
- ¼ cup All Purpose Flour
- ½ cup buttermilk
- 1/8 tsp garlic powder
- 1/8 tsp smoked paprika
- 4 slices cooked bacon
- 4 slices toast (I used Texas Toast)
- 1 cup arugula
