Simple Frozen Margarita Pie With Pretzel Graham Crust

My memories of icebox pies are so vivid.  Each time we visited my grandmother (which was often as she was only 15 minutes away), she had those colorful, creamy, heavenly confections in the fridge, waiting for us.  She made several different flavors, so it was always a surprise as to which color we would be treated to.  We couldn’t get enough.

 

 

Saving Room For Dessert has taken the same general icebox pie concept and elevated it to please the adult palate.  She uses scratch ingredients like fresh lime juice and heavy cream and adds just a dash of “party” to make classic margarita flavors into a pie.  The pretzel and graham cracker crust give a nod to the salted rim and just the right amount of savory to balance some of the sweetness.

For the crust:

  • 5 tablespoons unsalted butter, melted
  • ¼ cup sugar
  • 2 cups pretzel sticks
  • 2 sheets of graham crackers (four squares)

Filling:

  • 1 (14 ounce) can sweetened condensed milk
  • ⅓ cup fresh lime juice
  • 2 tablespoons tequila
  • 1½ tablespoons triple sec
  • 1 cup heavy whipping cream, whipped
  • 3 drops green food coloring (optional)

Topping:

  • Lime zest, for garnish
  • ½ cup whipping cream
  • 2 tablespoons powdered sugar
