The first step to having this convenient meal ever-handy is to buy boneless, skinless chicken thighs in bulk and keep them in the freezer. That way, literally, all you have to remember is to thaw the meat ahead of time.
The next step is to make the spice rub in bulk and in advance. I am telling you, it is so delicious, you will want to put it on everything! I have used it on pork loin and have even made a whole chicken in the crockpot using just some olive oil and this rub. The amount of heat is completely customizable to your family’s taste. Try regular chili powder, or mix it up with something more exotic like Chipotle or Aleppo pepper. The recipe also calls for 2 teaspoons of smoked Paprika, which is one of my all time favorite spices. So rich and smoky! But if you want to tone down that flavor a little, just do a teaspoon of smoked Paprika and a teaspoon of regular Paprika and you’ll be good.

Lastly, the best part it that this dish takes almost no time to cook! The secret is to broil it, turning it twice and finishing it with a delicious apple cider vinegar and honey glaze.
